This topping combination was originally one of Conor's favorites, and now it is mine too. One of his favorite pizza places in Maine does it perfectly. I could only hope my pizza is half as good as they make. Not to toot my own horn but, I think it's pretty close now. (toot toot) The cherry tomatoes with the pizza sauce bake and get sweeter and turn into little tomato jewels. Mix that with the creamy ricotta and the spicy kick from the sausage this pizza was deeeelicious.

your favorite pizza sauce!
1/3 pound of your favorite sausage, removed from casing; cooked + crumbled
handful of cherry tomatoes (if ya want!)
1/4 cup ricotta cheese; seasoned with salt and pepper
1/4 cup of mozzarella cheese
a couple of basil leaves, torn into small pieces
Preheat oven to 500.
On a floured surface, or a pizza peel roll out dough to desired thickness. If you are using a peel I usually check to make sure the dough can easily wiggle off the peel still. Next, layer the sauce on evenly. Now distribute the sausage and cherry tomatoes. Dollop the ricotta all over the pizza and lastly sprinkle the mozzarella.
Place pizza in the oven and cook for 8-10 minutes. Sprinkle torn basil on top and eat up Serve with a cold beer!
