I feel like fresh cranberries don't get enough love! This cake puts them to good use. The tart cranberries get a nice hug by the brown sugar beautiful-ness. Perfect to bring for all those holiday parties that are creepin' up. The cake isn't too sweet so it would go great with coffee for breakfast or for after dinner with a dollop of whipped cream. cranberry upside-down cake
2/3 cup lightly packed brown sugar
12 tablespoons unsalted butter, melted
1 tablespoon molasses
2 cups a.p flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3 eggs @ room temp
1 cup sour cream
2 cups of fresh (or frozen) cranberries
1/2 teaspoon almond extract
Preheat oven to 375, Line a 9-inch round cake pan with parchment and lightly grease bottom and sides.
In a medium sauce pan over medium heat add brown sugar, 4 tablespoons of the melted butter, molases and 1/4 cup of water. Bring up to a boil and then pour into prepared cake pan, let cool while you make the rest of this magical cake.
Next, sift together the flour, sugar, baking powder and salt together into a bowl. In a mixer, or a large bowl with a hand mixer, beat eggs and sour cream till combined. Add almond extract and mix. Scrape the sides of the bowl and add the remaining 8 tablespoons of melted butter and mix to combine. Lastly add dry ingredients, mix until smooth and incorporated.
Pour cranberries into the bottom of prepared cake pan. Gently press the berries into the brown sugar mixture. Now, gently dollop batter on top of canberries, you may need to use a spatula or spoon to evenly distribute and cover the cranberries. Try to be careful and not move the cranberries too much.
Place on a lined cookie sheet ( in the event of spillage/ overflow ) and bake for 30 to 40 minutes, or untill a cake tester comes out smooth. In my oven, it was exactlly 35 minutes. I covered the top with foil the last 5 minutes or so, as to not have it get too brown. Let cool for 15 minutes in the pan, then run a knife along the sides and invert on to plate.
