Sometimes, I just want to bake. I guess that makes sense because I have this blog here where I babble about silly things like cake and pizza. I find happiness in measuring flour and mixing it with sugar. So sometimes after working all day all i want to do is come home and cook or bake. This cake was so easy and cute to make, mixing everything IN the cake pan! You could absolutely mix it in a bowl and spray your cake pan with a non-stick spray so it would easily release, but it makes such a tiny amount I personally didn't mind. Save this recipe and when you have some last minute guests you can quickly throw it together and they will be impressed and happy :)
busy day chocolate cake
slightly adapted from this book
1 1/2cups all purpose flour
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon espresso powder
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons vegetable oil
1 teaspoon vanilla extract
1 tablespoon white vinegar
1 cup cold water
Preheat oven to 350.
In an 8 inch round or square pan whisk together flour, sugar, cocoa espresso powder, soda and salt together. Make a well in the middle of this mixture.
Pour the oil, vanilla, vinegar and cold water into the well. Slowly whisk together, taking care to not go over the sides. (although I definitely did)
Bake in pre-heated oven for 35 to 45 minutes. Remove and let cool completely. At this point you could frost the cake if you'd like, OR serve with some sweet vanilla berries like we did. Match made in a busy day heaven :)
1 cup each of sliced strawberries and cherries (or whatever other berry you would like! raspberries would be nice here too!)
1 scant teaspoon of white sugar
1 teaspoon of vanilla bean paste
stir all ingredients in a bowl and let them sit together and get happy and juicy and sing songs. serve over cake!
