I know I know, technically it is FALL but that doesn't mean we have to lock up the grill and forget it's existence. We can still a nice grilled dinner and savor that last sip of Summery beer. Or you can make this dinner and drink pumpkin flavored beverages. Basically you can do whatever you'd like...obviously.
This chicken has a nice and simple marinade, the yogurt keeps it from drying out but you can still dress it up with hot sauce, or maybe even some ranch if you're feeling sassy. Give it a try!
Look at our cute grill! it is probably one of my most favorite purchases, ever?
Perfect for just the two of us. That one propane tank lasted us ALL SUMMER!
chicken kebabs with limes and jalapeños
recipe from here!
2 tablespoons fresh lime juice
4 garlic cloves; minced
2 inch piece of fresh ginger; minced
2 jalapeños, chopped **ribs and seeds removed if you want a little less heat, I did one with one without**
1 cup plain greek yogurt
1 1/2 teaspoon salt
2 pounds of chicken either skinless boneless thighs or breast, cut into small pieces
zest of 1 lime (optional)
In a blender, or a big bowl with a whisk combine all ingredients except chicken and lime zest. Place marinade in a glass baking dish or a plastic freezer bag add chicken. If using a dish skewer chicken first, if using a bag you can skewer them after they have marinated. Place in fridge and let them hang out for at least two hours, or overnight.
Heat grill to medium-high and place chicken on the grill. Turning occasionally, they should take about 8-10 minutes. Sprinkle lime zest over skewers. Serve with extra lime slices and hot sauce!
We served this with a green salad, corn on the cob and some grilled zucchini (just splash some olive oil, salt, pepper and paprika and them them char up a little on the grill)
