This recipe was a slight accident. Sometimes, when I make the mistake of going food shopping while hungry or without a list I end up with a fresh hot loaf of bread, or a pint of ice cream or maybe two pints of ice cream. So I picked up a fresh loaf of bread one Sunday afternoon and then it sat on our counter for a few days. It got stale, so I made this! It's like the Italian way of using lemons to make lemonade, but with old bread into a beautiful bread salad!
Roasting the vegetables adds interesting flavors to this salad, which is typically made with fresh chopped up veggies. I love love loovveee the vinaigrette for this, you use 2 whole tomatoes! Just tomatoes and vinegar! It's bright and fresh and awesome. Make this salad and then sit outside and eat it with your favorite summer-y beer.

3 medium zucchini; cut into 1'' half moons
a pint of cherry tomatoes
2 or 3 large garlic cloves; diced
1/2 cup fresh basil; divided and chopped
1/2 a red onion; sliced
1 loaf crusty italian bread; cut into bite size cubes
2 medium tomatoes; cut into chunks and seeded
4 tablespoons white wine vinegar
1/2 cup olive oil
Preheat oven to 375.
On a lined baking sheet toss zucchini with a tablespoon of olive oil, salt and pepper. Let roast for 15 minutes. Pull from oven and flip zucchini, add cherry tomatoes and 1/4 cup of the basil. Let roast for 20 for 25 minutes longer. Remove and let cool.
To make vinaigrette:
In the bowl of a food processor place tomatoes and vinegar. Pulse together till combined and smooth, about 20 seconds. With the processor running slowly drizzle in olive oil. Add a pinch of salt and pepper and taste.
Assemble the salad!
In a large bowl toss together the roasted veggies, cubed bread, red onion and chopped basil. Slowly add in your dressing, stopping to mix everything evenly. It seemed like too much dressing to me at first, but the bread soaks so much up I did end up using all of it. Taste and adjust salt and pepper to your liking. Throw in the fridge for a 30 minutes to let the flavors marry and get happy together. Will keep for 5 days in the fridge.
try not to just eat all of these off the pan. i had a hard time.
