These brownies are rich, furdgy and perfect. Also, when you make them you can impress all your friends when you tell them the are mascarpone brownies. Fancy fancy. Make sure you make some fancy hand gesture when you say mascarpone so they truly understand the fanciness of the whole situation. They are rich and fudgy and perfect. I ended up cutting them into small cute squares. So small it's ok to have like 4 at a time. Right? Right!
These brownies are from the beautiful Kitchn Cookbook. This book is so helpful and filled with awesome recipes, I highly recommend it to each and every one of you.
1 cup (2 sticks) unsalted butter; cut into little pieces
3 oz bittersweet chocolate; finely chopped
1 cup of sugar
1/2 cup mascarpone
3 large eggs
1 teaspoon of vanilla
1/2 teaspoon salt
1/2 cup of unsweetened cocoa powder
1/2 cup all purpose flour
Heat oven to 325, line an 8x8 baking pan with parchment so that you have a little hanging over each of the sides.
Melt butter in a saucepan over a medium heat. Once melted, stir in chopped chocolate and stir till it is melted and smooooooth. Remove from heat. Let rest for 2 minutes then whisk in sugar. After the sugar is completely mixed in, whisk in mascarpone all the way. Next, whisk in eggs one at a time making sure each is incorporated before adding the next. Whisk in vanilla and salt, lastly add cocoa powder and flour and stir till batter is smooth. Try not to eat all the batter. This batter is very good.
Pour into prepared pan and bake 35-45 minutes, or until a tester comes out clean from the middle of the pan. Let cool completely and then cut into small squares. These will keep in an airtight container at room temp for one week.....if they last that long.
