Making these sandwiches is pretty much what always comes after making a pot of sauce and meatballs for us. It's lunch, it's dinner, it can also be breakfast if you need it to be. Roasting the peppers gives it an added kick, and the melty provolone cheese is just great! Make the sauce..then make the sando!
spicy meatball sandwiches:
2 bell peppers
1 jalapeño pepper
a giant pinch (about 1/2 teaspoon) crushed red pepper flakes
4 thickly sliced bread of your choice
3 or 4 slices of provolone cheese
leftover baked meatballs and sauce from here!
Using the flame on your stove top, place one pepper at a time directly over flame. Using a tong to rotate as needed. Don't wonder away from these! Before you start grab a drink and put your favorite Ace of Base song on so you have something to sing along to. Once all peppers are evenly charred put into a medium size bowl and cover tightly with plastic wrap. The steam from the heat of the peppers will make it easy for the skins to come off! It is pepper MAGIC! If you don't have a gas stove you could also do this in your broiler, just make sure you stay close by!
After a few minutes remove plastic wrap and rub the peppers with your hands. You will see the skin and char marks come off, if you don't feel like getting your hands all peppery you can use a damp paper towel to do this part.
Next slice the peppers, I just chopped the tops off the bell peppers and left the ribs and seeds in, with the jalapeño I took some of the seeds out, because I am a baby. Toss together in a bowl with salt and a generous pinch of crushed red pepper flakes. Set aside!
Preheat oven to 350. Arrange 4 slices of bread on a lined sheet pan. Arrange a nice scoop of the pepper mix to 2 slices, Next slice meatballs in half and lay on top of peppers. Use how ever many you'd like. We ended up doing one and half per sandwich. Spoon some sauce on top to evenly cover your sandwich. Drizzle olive oil on remaining 2 slices of bread.
Bake in oven for 5-7 minutes. Cover the meatball side with a couple slices of provolone and stick back in the oven another 4 minutes. Remove- and top them with their toasted partners and enjoy!
