These are reallly great guys. Rice krispie treats by themselves, great treat, but not something I make that often,. To embrace the occasion and add some festive flare, I summoned this creation, which is like the sophisticated aunt of the baby rice krispie treats. I did that by adding in some brown butter and chopped pecans. The sugar on top makes these purrrrrfect for any last minute parties you get invited to around this time of the year. Slightly adapted from here!
8 tablespoons of butter
a 10oz bag of marshmallows
heaping 1/4 teaspoon salt
6 cups of rice cereal
1/2 cup chopped pecans ( Up this to 3/4 if you're feeling super nutty)
assorted festive sanding sugars
Line a 9x9 pan with parchment
Start by heating a medium sauce pot over medium-low heat. Now we make brown butter! Add butter to pot and let melt. As it melts and begins to brown you can swirl it around the pot, it should be bubbly. Don't walk away, there is a fine line between brown butter and straight up burned butter. It should smell nutty and have a deep golden color, about 5 to 8 minutes.
Once butter is browned turn off heat. Add bag of marshmallows and stir to melt them, The heat from the pan should be enough but you can turn it to low if you need to. You want the marshmallows to melt but not cook. Next add rice cereal, salt and pecans, mix till evenly incorporated. This part is a nice little arm exercise, consider it your workout for the day and the rice krispies are the reward.
Evenly dump into prepared pan, now using a piece of wax paper sprayed with cooking spray (Mama Rubes favorite trick) evenly press into the pan. Sprinkle all the festive-ass sprinkles to make them look like the little jewels on your favorite ugly sweater.
